2 cups cooked chicken, shredded (rotisserie chicken works great)

1 cup BBQ sauce (your favorite brand)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

4 large flour tortillas

1 small red onion, thinly sliced

1 cup corn (canned or frozen)

2 tablespoons olive oil

Fresh cilantro, for garnish (optional)

Sour cream or Greek yogurt, for serving (optional)

Instructions
 

Prepare the Chicken Mixture: In a medium bowl, combine the shredded chicken and BBQ sauce until well-coated. Adjust the BBQ sauce to your taste for a tangier or sweeter flavor.

    Sauté the Onions: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced red onion and sauté for about 2-3 minutes until softened and slightly caramelized. Remove from the skillet and set aside.

      Build the Quesadillas: In the same skillet, add another tablespoon of olive oil. Place one tortilla in the skillet and spread half of the BBQ chicken mixture evenly over the tortilla. Sprinkle half of the shredded cheddar and mozzarella cheese on top, followed by half of the sautéed onions and corn. Top with a second tortilla.

        Cook the Quesadilla: Cook for about 3-4 minutes on one side until golden brown and crispy. Carefully flip the quesadilla using a large spatula and cook the other side for another 3-4 minutes, until the cheese is melted and the tortilla is golden and crispy.

          Repeat: Remove the cooked quesadilla from the skillet and let it rest for a minute. Repeat the process with the remaining tortillas and filling to make a second quesadilla.

            Serve: Cut each quesadilla into wedges and garnish with fresh cilantro, if desired. Serve with sour cream or Greek yogurt on the side for dipping.
