Ingredients

1 lb flank steak, thinly sliced

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

1 red bell pepper, sliced

1 green bell pepper, sliced

1 medium onion, sliced

2 cloves garlic, minced

4 large tortillas (flour or corn)

1 cup shredded cheese (cheddar or Mexican blend)

1 avocado, sliced

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions

Marinate the Steak: In a medium bowl, combine the sliced flank steak with 1 tablespoon of olive oil, chili powder, cumin, smoked paprika, salt, and pepper. Toss until the steak is evenly coated and let it marinate for at least 15 minutes (you can also do this in advance and marinate overnight in the fridge for enhanced flavor).

Sauté the Veggies: In a large skillet over medium-high heat, add the remaining tablespoon of olive oil. Once hot, add the sliced red and green bell peppers, onion, and minced garlic. Sauté for about 5-7 minutes, or until the peppers and onions are tender and slightly charred. Remove the veggies from the skillet and set aside.

Cook the Steak: In the same skillet, add the marinated flank steak. Cook for 4-5 minutes, stirring occasionally, until the steak is browned and cooked to your desired doneness.

Combine Ingredients: Return the sautéed veggies to the skillet with the beef, and mix well. Cook together for another 2 minutes to infuse the flavors.

Assemble the Wraps: Warm the tortillas in a dry skillet or microwave for a few seconds. On each tortilla, layer the beef and veggie mixture, top with shredded cheese and avocado slices.

Wrap and Serve: Fold in the sides of the tortilla, then roll it up tightly to enclose the filling. Serve immediately, garnished with fresh cilantro and lime wedges on the side for squeezing over the wraps.
