1 pound large shrimp, peeled and deveined

3 medium zucchinis, spiralized into noodles

4 cloves garlic, minced

1 lemon (zested and juiced)

1/4 cup olive oil

1 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

1/4 cup fresh parsley, chopped (for garnish)

Grated Parmesan cheese (optional, for serving)

Marinate the Shrimp: In a bowl, combine the peeled shrimp, minced garlic, lemon zest, lemon juice, olive oil, red pepper flakes (if using), salt, and pepper. Toss to coat the shrimp well. Let it marinate for about 15-20 minutes while you prepare the zucchini noodles.

    Prepare the Zucchini Noodles: Use a spiralizer to create noodles from the zucchinis. If you don’t have a spiralizer, you can use a vegetable peeler to create ribbon-like strips. Set aside.

      Cook the Shrimp: In a large skillet, heat a drizzle of olive oil over medium-high heat. Once hot, add the marinated shrimp to the skillet in a single layer. Cook for about 2-3 minutes on one side, until they start to turn pink. Flip the shrimp and cook for an additional 1-2 minutes until fully cooked through and opaque.
