4 medium tomatoes, sliced

2 zucchinis, sliced into rounds

1 bell pepper (any color), chopped

1 small red onion, diced

2 cloves garlic, minced

1 cup fresh spinach, chopped

1 cup breadcrumbs (preferably whole wheat)

½ cup grated Parmesan cheese

2 teaspoons dried oregano

1 teaspoon dried basil

½ teaspoon salt

½ teaspoon black pepper

½ cup shredded mozzarella cheese

2 tablespoons olive oil

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the oven: Preheat your oven to 375°F (190°C).

    Prepare the veggie mixture: In a large bowl, combine the sliced tomatoes, zucchinis, bell pepper, red onion, garlic, and spinach. Drizzle with the olive oil, and sprinkle in the oregano, basil, salt, and pepper. Toss everything together until the vegetables are well-coated.

      Layer the casserole: In a greased 9x13 inch baking dish, spread half of the vegetable mixture evenly across the bottom. Sprinkle half of the breadcrumbs over the vegetables and then add half of the Parmesan cheese.

        Repeat the layers: Layer the remaining vegetables on top of the first layer. Finish with the remaining breadcrumbs and Parmesan cheese.

          Add the mozzarella: Evenly distribute the shredded mozzarella cheese over the top of the casserole for a bubbly and golden finish.

            Bake the casserole: Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly and the vegetables are tender.

              Garnish and serve: Let the casserole cool for 5 minutes before slicing. Garnish with fresh basil leaves if desired, and serve warm.
