Ingredients

1 pound large shrimp, peeled and deveined

1 cup fresh blueberries

2 tablespoons honey

1 tablespoon soy sauce

1 teaspoon apple cider vinegar

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon grated ginger

1/2 teaspoon red pepper flakes (adjust to spice preference)

1 cup shredded carrots

1 red bell pepper, thinly sliced

1 cucumber, julienned

1 head butter or romaine lettuce, leaves separated

Salt and pepper to taste

Fresh cilantro or mint leaves, for garnish

Lime wedges, for serving

Instructions

Make the Blueberry Glaze: In a small saucepan over medium heat, add the fresh blueberries, honey, soy sauce, and apple cider vinegar. Bring to a gentle simmer, stirring occasionally until the blueberries burst and the mixture thickens slightly (about 5-7 minutes). Remove from heat and let cool. Blend if desired for a smoother consistency.

Prepare the Shrimp: In a large skillet, heat the olive oil over medium heat. Add the minced garlic, grated ginger, and red pepper flakes. Sauté for about 1 minute until fragrant.

Cook the Shrimp: Add the shrimp to the skillet. Season with salt and pepper. Cook, stirring occasionally, until the shrimp turn pink and opaque (about 4-5 minutes). Remove from heat and toss with half of the blueberry glaze.

Assemble the Wraps: On each lettuce leaf, add a spoonful of shrimp, followed by shredded carrots, sliced red bell pepper, and julienned cucumber. Drizzle additional blueberry glaze over the top.

Garnish and Serve: Top with fresh cilantro or mint leaves. Serve the shrimp lettuce wraps with lime wedges on the side for an extra zing.
