Shrimp Avocado Ceviche

1 lb shrimp, peeled and deveined

1 cup fresh lime juice (about 6-8 limes)

1 medium red onion, finely chopped

1 medium cucumber, diced

2 medium tomatoes, diced

1-2 jalapeños, seeded and finely chopped (adjust to taste)

1 ripe avocado, diced

1/4 cup fresh cilantro, chopped

Salt and pepper, to taste

Tortilla chips, for serving

Instructions
 

Cook the Shrimp: In a pot of boiling salted water, cook the shrimp until pink and opaque, about 2-3 minutes. Immediately remove them from the heat and place them in an ice bath to stop the cooking process. Once cool, chop the shrimp into bite-sized pieces.

    Marinate the Shrimp: In a large mixing bowl, combine the chopped shrimp and fresh lime juice. Ensure the shrimp are completely submerged in lime juice; this will further cook the shrimp with citrus.

      Add Vegetables: After letting the shrimp marinate for 15-20 minutes, add finely chopped red onion, diced cucumber, diced tomatoes, and jalapeños to the bowl. Stir gently to combine.

        Incorporate Avocado and Cilantro: Carefully fold in the diced avocado and chopped cilantro, taking care not to mash the avocado. Season with salt and pepper to taste.

          Chill and Serve: Cover the ceviche with plastic wrap and let it chill in the refrigerator for another 20-30 minutes for the flavors to meld. Serve fresh with tortilla chips on the side.
