Sheet Pan Teriyaki Salmon and Asparagus

4 (6 oz) salmon fillets

1 lb asparagus, trimmed

1/3 cup soy sauce (low sodium recommended)

2 tablespoons honey or maple syrup

2 tablespoons rice vinegar

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon grated fresh ginger

1 tablespoon cornstarch (optional, for glaze thickening)

1 tablespoon sesame seeds (for garnish)

2 green onions, sliced (for garnish)

Salt and pepper to taste

Olive oil for drizzling

Prepare the Sauce: In a small bowl, whisk together soy sauce, honey (or maple syrup), rice vinegar, sesame oil, minced garlic, and grated ginger. This will be your teriyaki sauce. If you prefer a thicker sauce, mix in the cornstarch dissolved in a tablespoon of water.

    Marinate the Salmon: Place the salmon fillets in a shallow dish and pour half of the teriyaki sauce over them. Let them marinate in the fridge for at least 15 minutes, or longer if you can for a deeper flavor.

      Preheat the Oven: Preheat your oven to 400°F (200°C).

        Prepare the Asparagus: On a large sheet pan, arrange the trimmed asparagus. Drizzle with olive oil, season with salt and pepper, and toss to coat evenly. Space the asparagus out for even roasting.

          Add the Salmon: Remove the salmon from the marinade and place the fillets on the same sheet pan, nestled among the asparagus.

            Brush the Glaze: Generously brush the remaining teriyaki sauce over the salmon fillets, allowing some to drip onto the asparagus for flavor.

              Bake: Place the sheet pan in the preheated oven and bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork, and the asparagus is tender but crisp.

                Garnish and Serve: Once cooked, remove from the oven and sprinkle with sesame seeds and sliced green onions. Serve immediately, drizzling any pan juices over the top for additional flavor.
