Sheet Pan Pork Chops and Crispy Potatoes

4 bone-in pork chops (about 1 inch thick)

1 lb baby potatoes, halved

4 tablespoons olive oil, divided

2 teaspoons smoked paprika

2 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon red pepper flakes (optional)

1 teaspoon fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Potatoes: In a large bowl, toss the halved baby potatoes with 2 tablespoons of olive oil, 1 teaspoon of smoked paprika, salt, pepper, and thyme until they are well coated.

      Prepare the Pork Chops: In a separate bowl, rub the pork chops with the remaining 2 tablespoons of olive oil, garlic powder, onion powder, 1 teaspoon of smoked paprika, red pepper flakes (if using), and a sprinkle of salt and pepper on both sides.

        Arrange on a Sheet Pan: Spread the seasoned potatoes out in an even layer on a large sheet pan. Place the pork chops on the sheet pan around the potatoes.

          Bake: Transfer the sheet pan to the oven and bake for 25-30 minutes, or until the pork chops reach an internal temperature of 145°F (63°C) and the potatoes are golden brown and crispy.
