4 salmon fillets

1 pound asparagus, trimmed

1 red bell pepper, sliced into strips

1 cup cherry tomatoes, halved

4 cloves garlic, minced

4 tablespoons olive oil

2 lemons (1 for zest and juice, 1 sliced)

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnishing)

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a large sheet pan with parchment paper for easy cleanup.

    Prepare the Marinade: In a small bowl, whisk together the olive oil, minced garlic, zest and juice of 1 lemon, oregano, paprika, salt, and pepper until combined.

      Arrange the Vegetables: On one side of the prepared sheet pan, arrange the asparagus, red bell pepper, and cherry tomatoes. Drizzle half of the lemon garlic marinade over the veggies and toss to coat evenly.

        Add the Salmon: Place the salmon fillets on the other side of the sheet pan. Drizzle the remaining marinade over the fillets, ensuring they're well-coated. Top each fillet with a lemon slice.
