4 large flour tortillas

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

1 cup bell peppers (red, yellow, and green), diced

1 cup zucchini, diced

1 cup mushrooms, sliced

1 small red onion, thinly sliced

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh cilantro, chopped (for garnish)

Sour cream or guacamole (for serving)

Instructions
 

Prepare the Filling:

    - Heat 1 tablespoon of olive oil in a large skillet over medium heat.

      - Add the red onion and garlic, sauté for about 2 minutes until fragrant.

        - Add the diced zucchini, mushrooms, and bell peppers. Sprinkle with cumin, smoked paprika, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until the veggies are tender. Remove from heat.

          Assemble the Quesadillas:

            - On one half of each tortilla, layer a mix of mozzarella and cheddar cheeses.

              - Spoon the sautéed vegetable mixture over the cheese.

                - Top with a little more cheese and fold the tortillas in half to close.

                  Cook the Quesadillas:

                    - Return the large skillet to the heat and add the remaining tablespoon of olive oil.

                      - Once hot, place one or two folded quesadillas in the skillet (depending on size) and cook for about 3-4 minutes per side or until golden brown and the cheese has melted.

                        - Remove from the skillet and let them cool slightly before cutting into wedges.

                          Serve:

                            - Garnish the quesadillas with fresh cilantro and serve with sour cream or guacamole on the side.
