4 large bell peppers (any color)

1 pound ground turkey

2 cups fresh spinach, chopped

1 cup cooked quinoa or rice

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon olive oil

1 teaspoon smoked paprika

1 teaspoon dried oregano

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup shredded mozzarella cheese

1/2 cup diced tomatoes (canned or fresh)

Fresh basil or parsley for garnish (optional)

Instructions
 

Prepare the Peppers: Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside of each pepper with a little olive oil and place them in a baking dish, cut side up.

    Cook the Turkey: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened (about 3-4 minutes). Add the ground turkey, cooking until browned and fully cooked (around 5-7 minutes). Stir in the smoked paprika, oregano, salt, and black pepper.

      Combine the Filling: To the cooked turkey, add the chopped spinach and sauté until wilted (about 2 minutes). Remove from heat and mix in the cooked quinoa or rice and diced tomatoes, stirring until well combined.

        Stuff the Peppers: Carefully spoon the turkey and spinach mixture into each bell pepper, packing them lightly. Top each stuffed pepper with an even layer of shredded mozzarella cheese.

          Bake: Place the stuffed peppers in the preheated oven and bake for 25-30 minutes, or until the peppers are tender and the cheese is melted and bubbly.
