Ingredients

1 large sweet potato, peeled and cubed (about 1 cup)

1 cup all-purpose flour (or whole wheat flour for a healthier option)

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1/4 tsp black pepper

1/2 tsp garlic powder

1/4 tsp smoked paprika (optional)

1 cup buttermilk (can substitute with plant-based milk)

2 large eggs

3 tbsp melted butter or olive oil

1/4 cup grated Parmesan cheese (optional)

Fresh herbs (such as chives or parsley), chopped for garnish

Instructions

Cook the Sweet Potato: In a pot, boil the cubed sweet potato in salted water until tender, about 10-15 minutes. Drain and mash until smooth. Let it cool slightly.

Prepare the Batter: In a large bowl, whisk together the flour, baking powder, baking soda, salt, black pepper, garlic powder, and smoked paprika, if using.

Combine Wet Ingredients: In another bowl, mix together the buttermilk, eggs, and melted butter. Add the mashed sweet potato to this mixture and stir until well combined.

Mix Dry and Wet Ingredients: Pour the wet ingredients into the dry ingredients and fold gently until just combined. If using, fold in the grated Parmesan cheese for an added depth of flavor.

Preheat the Waffle Iron: Preheat your waffle iron according to the manufacturer’s instructions.

Cook the Waffles: Grease the waffle iron lightly with cooking spray or brush with oil. Pour an appropriate amount of batter onto the preheated iron (usually about 1 cup, depending on your waffle iron size). Close the lid and cook until the waffles are golden brown and crispy, usually about 4-5 minutes.

Serve: Carefully remove the waffles and place them on a wire rack to cool slightly (this keeps them crispy). Serve warm, garnished with fresh herbs, and drizzle with maple syrup, honey, or a dollop of sour cream, if desired.

Enjoy: Best enjoyed immediately, these savory sweet potato waffles can also be reheated in the toaster for a quick breakfast later!
