2 cups cooked Jasmine rice (preferably day-old)

1 lb beef sirloin, thinly sliced

1 large onion, thinly sliced

3 cloves garlic, minced

1 cup mixed vegetables (peas, carrots, bell peppers)

2 large eggs

4 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon sesame oil

2 green onions, chopped (for garnish)

Salt and pepper to taste

Optional: 1 tablespoon Sriracha or chili sauce for heat

Prep the Beef: In a bowl, marinate the beef slices with 1 tablespoon of soy sauce, salt, and pepper. Set aside for about 15 minutes.

    Scramble the Eggs: In a large skillet or wok, heat 1 tablespoon of sesame oil over medium heat. Add the eggs and scramble until fully cooked. Remove from the pan and set aside.

      Cook the Beef: In the same skillet, add a bit more sesame oil if necessary, and increase the heat to high. Add the marinated beef slices, searing them until browned and cooked through (about 3-4 minutes). Remove the beef from the pan and set aside.

        Sauté the Vegetables: In the same skillet, add another tablespoon of sesame oil. Toss in the sliced onions and cook for about 2 minutes, until they begin to soften. Add the minced garlic and mixed vegetables, stir-frying for an additional 3-4 minutes until everything is tender.

          Combine and Stir-Fry: Return the cooked beef to the skillet, along with the scrambled eggs. Add the day-old rice, the remaining soy sauce, oyster sauce, and Sriracha (if using). Stir everything together, making sure the rice is heated through and well combined with the beef and vegetables. Taste and adjust seasonings if necessary.

            Garnish and Serve: Remove from heat, sprinkle with chopped green onions, and serve hot.
