8 large lasagna noodles

2 cups cooked chicken, shredded

1 cup ricotta cheese

1 cup grated mozzarella cheese, divided

1/2 cup Parmesan cheese, grated

1 egg

2 cups fresh spinach, chopped

2 cloves garlic, minced

1 tablespoon fresh basil, chopped (or 1 teaspoon dried)

1 tablespoon fresh parsley, chopped (or 1 teaspoon dried)

1 teaspoon dried oregano

3 cups marinara sauce

Salt and pepper, to taste

Olive oil, for sautéing

Instructions
 

Cook the Lasagna Noodles: Bring a large pot of salted water to a boil. Add the lasagna noodles and cook according to package instructions until al dente. Drain and lay them flat on a clean kitchen towel to prevent sticking.

    Prepare the Filling: In a large skillet, heat a drizzle of olive oil over medium heat. Add the minced garlic and cook for about 1 minute until fragrant. Stir in the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.

      Mix the Cheese Mixture: In a large bowl, combine the shredded chicken, ricotta cheese, 1/2 cup of the mozzarella cheese, Parmesan cheese, egg, wilted spinach mixture, basil, parsley, oregano, salt, and pepper. Mix until all ingredients are well incorporated.

        Assemble the Roll-Ups: Preheat your oven to 375°F (190°C). Spread 1 cup of marinara sauce on the bottom of a 9x13 inch baking dish. Take one lasagna noodle, place 2-3 tablespoons of the chicken mixture at one end, and roll it up tightly. Place the roll seam-side down in the prepared dish. Repeat with the remaining noodles and filling.

          Top with Sauce and Cheese: Once all the roll-ups are in the baking dish, pour the remaining marinara sauce over the top. Sprinkle the remaining 1/2 cup of mozzarella cheese evenly over the sauce.

            Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and lightly golden.
