2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon dried thyme

1 teaspoon dried oregano

1/2 cup unsalted butter, cold and cubed

1 cup sharp cheddar cheese, shredded

1/2 cup feta cheese, crumbled

1 cup buttermilk

1 tablespoon fresh parsley, chopped (optional, for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, black pepper, thyme, and oregano until well combined.

      Cut in the Butter: Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, work the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized pieces of butter still visible.

        Add Cheese: Stir in the shredded cheddar and crumbled feta cheese until evenly distributed throughout the mixture.

          Combine with Buttermilk: Pour in the buttermilk and gently mix with a fork until just combined. Be careful not to overwork the dough; a few lumps are okay.

            Shape the Dough: Transfer the dough onto a floured surface and gently knead it a couple of times to bring it together. Pat it into a 1-inch thick rectangle. Use a sharp knife or pizza cutter to cut the dough into squares or triangles.

              Prepare for Baking: Place the scones onto the prepared baking sheet, spacing them apart to allow for rising. Optionally, brush the tops with a little extra buttermilk to give them a nice golden color when baked.

                Bake: Bake in the preheated oven for 18-20 minutes or until the scones are golden brown and sound hollow when tapped on the bottom.

                  Cool and Serve: Remove from the oven and let them cool for a few minutes on a wire rack. Serve warm, garnished with fresh parsley if desired.
