1 lb large shrimp, peeled and deveined

1 cup jasmine rice

2 cups chicken broth (or seafood broth)

4 tablespoons unsalted butter

5 cloves garlic, minced

1 small onion, finely chopped

1 red bell pepper, diced

1 cup frozen peas

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper to taste

2 tablespoons fresh lemon juice

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Rice: In a medium saucepan, combine the jasmine rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and let it simmer for about 15 minutes, or until the rice is tender and the liquid is absorbed. Fluff with a fork and set aside.

    Sauté the Vegetables: In a large skillet, melt 2 tablespoons of butter over medium heat. Add the chopped onion and diced red bell pepper. Sauté for about 4-5 minutes or until the vegetables are soft.

      Cook the Shrimp: Push the vegetables to the side of the skillet and add the remaining 2 tablespoons of butter in the center. Add the minced garlic, smoked paprika, and oregano. Sauté for 1 minute until fragrant. Then, add the shrimp and cook for about 2-3 minutes on one side until pink, flip them, and cook for another 1-2 minutes until fully cooked. Season with salt and pepper to taste.

        Combine Everything: Once the shrimp are cooked, add the cooked rice and frozen peas to the skillet. Pour in the fresh lemon juice and toss everything together gently, allowing it to heat through for about 2-3 minutes.
