Ingredients

1 lb large shrimp, peeled and deveined

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon red pepper flakes (optional for heat)

1 cup long-grain white rice

2 cups chicken broth (or vegetable broth for a lighter taste)

1 small onion, finely chopped

1 bell pepper (any color), diced

½ cup frozen peas

1 tablespoon soy sauce

1 teaspoon lemon juice

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Prepare the Shrimp:

    - In a large skillet, melt 2 tablespoons of butter over medium heat. Add minced garlic and cook for about 1-2 minutes until fragrant but not browned.

      - Add the shrimp to the skillet, seasoned with salt, black pepper, and red pepper flakes if using. Sauté for about 2-3 minutes until shrimp start to turn pink. Remove from the skillet and set aside.

        Cook the Rice:

          - In the same skillet, add remaining 2 tablespoons of butter. Once melted, add chopped onion and bell pepper. Sauté until softened, about 5 minutes.

            - Stir in the rice and toast it for 2-3 minutes, ensuring it’s well-coated in the butter and flavors.

              - Carefully pour in the chicken broth and soy sauce. Bring to a boil, then reduce heat to a simmer and cover. Cook for 15 minutes or until the rice is tender and the liquid is absorbed.

                Combine and Finish:

                  - Once the rice is cooked, stir in the frozen peas and let them heat through for a minute.

                    - Return the sautéed shrimp to the skillet, adding lemon juice and tossing everything together gently. Cook for another 1-2 minutes to heat the shrimp thoroughly.

                      Serve:

                        - Fluff the rice with a fork, ensuring the shrimp and peas are mixed throughout. Garnish with freshly chopped parsley and serve with lemon wedges on the side.
