Salted Caramel Butter Bars

For the Base:

1 cup (226g) unsalted butter, softened

1 cup (200g) granulated sugar

1 cup (220g) packed brown sugar

2 large eggs

2 teaspoons vanilla extract

2 cups (250g) all-purpose flour

½ teaspoon baking powder

½ teaspoon salt

For the Salted Caramel:

1 cup (200g) granulated sugar

6 tablespoons (85g) unsalted butter, cut into pieces

½ cup (120ml) heavy cream

1 teaspoon sea salt (more for topping)

Instructions
 

Preheat the Oven:

    Preheat your oven to 350°F (175°C) and lightly grease and line a 9x13 inch baking pan with parchment paper, leaving an overhang for easy removal.

      Make the Base:

        In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

          Combine Dry Ingredients:

            In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined and no streaks of flour remain.

              Bake the Base:

                Spread the batter evenly into the prepared baking pan. Bake in the preheated oven for 20-25 minutes or until the edges start to turn golden brown. A toothpick inserted in the center should come out with a few moist crumbs. Remove from oven and let it cool while you prepare the caramel.

                  Prepare the Salted Caramel:

                    In a medium saucepan over medium heat, combine the sugar and stir continuously until it melts and turns a deep amber color. Be careful not to burn it!

                      Add Butter and Cream:

                        Once melted, quickly whisk in the butter until fully incorporated. Slowly pour in the heavy cream, whisking continuously until smooth. Remove from heat and stir in the sea salt.

                          Assemble the Bars:

                            Pour the warm salted caramel over the cooled base, spreading it evenly. Let it sit for about 10 minutes to set slightly.

                              Cool and Serve:

                                Allow the bars to cool completely at room temperature. Once set, lift them out of the pan using the parchment paper. Cut into squares, sprinkle a bit more sea salt on top for garnish if desired, and enjoy!
