Rustic Peach Cobbler with Oats

For the Filling:

4 cups fresh peaches, peeled and sliced

1/2 cup granulated sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 tablespoon cornstarch

1 teaspoon ground cinnamon

1/4 teaspoon salt

For the Topping:

1 cup rolled oats

1 cup all-purpose flour

1/2 cup brown sugar, packed

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, melted

1/2 cup buttermilk

1 teaspoon vanilla extract

Instructions
 

Preheat the oven to 350°F (175°C). Grease a 9-inch square baking dish or a similar-sized oven-safe dish.

    Prepare the Peach Filling: In a large mixing bowl, combine the sliced peaches, granulated sugar, lemon juice, vanilla extract, cornstarch, cinnamon, and salt. Toss to coat evenly and set aside while you prepare the topping.

      Make the Oat Topping: In another bowl, whisk together the rolled oats, flour, brown sugar, baking powder, baking soda, and salt. Create a well in the center and add the melted butter, buttermilk, and vanilla extract. Stir until just combined, being careful not to overmix.

        Assemble the Cobbler: Spread the peach filling evenly in the prepared baking dish. Drop spoonfuls of the oat topping over the peaches, allowing some of the peaches to peek through.

          Bake: Place the cobbler in the preheated oven and bake for 35-40 minutes, or until the topping is golden brown and the peach filling is bubbly.
