Ingredients

1 cup unsalted butter, softened

2/3 cup powdered sugar

1 teaspoon vanilla extract

2 cups all-purpose flour

1/4 teaspoon salt

2 tablespoons fresh rosemary, finely chopped

Optional: Coarse sea salt for sprinkling

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

Creaming the Butter: In a large mixing bowl, beat the softened butter and powdered sugar together until the mixture is light and fluffy, about 3-4 minutes. Stir in the vanilla extract until well combined.

Mixing Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, salt, and finely chopped rosemary.

Combining Ingredients: Gradually add the dry mixture to the creamed butter mixture, mixing until just combined. The dough may be crumbly but should hold together when pressed.

Shaping the Cookies: Transfer the dough onto a clean surface and shape it into a log about 2 inches in diameter. Wrap it in plastic wrap and chill in the refrigerator for at least 30 minutes to firm up.

Slicing the Dough: Once chilled, unwrap the log and use a sharp knife to slice the dough into 1/4-inch thick rounds. Place them spaced apart on the prepared baking sheet.

Optional Topping: If desired, sprinkle a pinch of coarse sea salt on top of each cookie for an extra flavor boost.

Baking: Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden. The cookies should be firm, but not overly brown.

Cooling: Remove from the oven and let them cool on the baking sheet for 5 minutes, then transfer the cookies to a wire rack to cool completely.

Serving: Enjoy the cookies on their own or pair them with cheese for an evolved taste experience!
