2 cups all-purpose flour

1 cup warm water (about 110°F)

2 teaspoons active dry yeast

1 teaspoon sugar

1 teaspoon salt

2 tablespoons olive oil, plus more for greasing

2 cloves garlic, finely minced

2 tablespoons fresh rosemary, chopped (plus extra for garnish)

1 teaspoon coarse sea salt (for topping)

Instructions
 

Activate the Yeast: In a small bowl, combine warm water, sugar, and yeast. Stir gently and let it sit for about 5-10 minutes until frothy.

    Make the Dough: In a large mixing bowl, combine the flour and salt. Create a well in the center and add the activated yeast mixture, olive oil, minced garlic, and chopped rosemary.

      Mix the Dough: Stir the mixture with a wooden spoon until it begins to come together. When dough is too difficult to stir, use your hands to knead it in the bowl until it forms a slightly sticky but cohesive dough.

        First Rise: Lightly grease a bowl with olive oil, place the dough in it, and cover with a damp cloth or plastic wrap. Let it rise in a warm spot for about 1 hour, or until it has doubled in size.

          Preheat Oven: About 15 minutes before the dough is ready, preheat your oven to 375°F (190°C). Grease a standard muffin tin with olive oil.

            Shape the Muffins: Once the dough has risen, punch it down to release any air. Divide the dough into 12 equal portions and shape each portion into a ball. Place each ball into the greased muffin tin, leaving some space between them.

              Second Rise: Cover the muffin tin with a cloth and let the dough rise again for about 30 minutes until puffed.

                Season the Tops: Just before baking, brush the tops of the muffins with a little olive oil and sprinkle with coarse sea salt and additional rosemary.

                  Bake the Muffins: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until golden brown and the tops sound hollow when tapped.

                    Cool and Serve: Allow the muffins to cool in the pan for about 5 minutes before transferring them to a wire rack. Serve warm or at room temperature, perfect for dipping in olive oil or enjoying on their own!
