Ingredients

3 ½ cups all-purpose flour

1 packet (2 ¼ tsp) active dry yeast

1 ½ tsp salt

2 tbsp sugar

1 cup warm milk (110°F/43°C)

¼ cup unsalted butter, melted

2 tbsp fresh rosemary, finely chopped

4 cloves garlic, minced

1 egg (for egg wash)

Extra rosemary and sea salt for topping

Instructions

Activate the Yeast: In a small bowl, combine warm milk, sugar, and yeast. Allow it to sit for about 5-10 minutes, or until foamy.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, salt, and chopped rosemary.

Combine Wet and Dry: Once the yeast mixture is foamy, add it to the flour mix, along with the melted butter and minced garlic. Stir until a shaggy dough forms.

Knead the Dough: Turn the dough out onto a floured surface and knead it for about 8-10 minutes until it's smooth and elastic.

First Rise: Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm environment for 1-2 hours, or until doubled in size.

Shape Rolls: Once risen, punch down the dough and divide it into 12 equal portions. Shape each portion into a ball and place them in a greased baking dish, keeping a little space between them.

Second Rise: Cover the rolls with a damp cloth and let them rise again for about 30-45 minutes, until puffy.

Preheat Oven: Preheat your oven to 375°F (190°C).

Egg Wash: In a small bowl, beat the egg, and brush it over the tops of the rolls. Sprinkle with extra rosemary and sea salt.

Bake: Place the rolls in the preheated oven and bake for 20-25 minutes, or until golden brown and cooked through.

Cool and Serve: Once baked, remove from the oven and let them cool slightly before serving warm! Enjoy these delightful rolls with butter or as a perfect accompaniment to any meal.
