4 large whole wheat tortillas

1 cup fresh spinach leaves

1 small cucumber, thinly sliced

1 medium carrot, grated

Make the Hummus: In a food processor, combine the roasted red peppers, chickpeas, tahini, lemon juice, minced garlic, ground cumin, and salt. Pulse until smooth. While the processor is running, gradually drizzle in the olive oil until the hummus is creamy and well blended. Taste and adjust seasoning if needed.

    Prepare the Wraps: Lay out the whole wheat tortillas on a clean, flat surface. Spread a generous layer (about 1/4 cup) of the roasted red pepper hummus over each tortilla, leaving about an inch around the edges.

      Layer the Fillings: On top of the hummus, evenly distribute the fresh spinach leaves, sliced cucumber, grated carrot, sliced red onion, and feta cheese (if using). Be careful not to overfill, as it will make rolling difficult.

        Roll It Up: Starting from one end, carefully roll the tortilla tightly, tucking in the sides as you go. Continue rolling until you reach the end of the tortilla. Repeat with the remaining tortillas.
