Roasted Garlic White Bean Toast

Ingredients
  

1 whole head of garlic

1 can (15 oz) white beans (cannellini or navy beans), drained and rinsed

2 tablespoons olive oil, plus extra for drizzling

1 tablespoon lemon juice

½ teaspoon salt

¼ teaspoon black pepper

¼ teaspoon red pepper flakes (optional, for a kick)

1 teaspoon fresh rosemary or thyme, chopped (plus extra for garnish)

4 slices of sourdough bread or crusty bread of your choice

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Roast the Garlic:

    - Preheat your oven to 400°F (200°C).

      - Cut off the top of the head of garlic, exposing the cloves. Drizzle with a little olive oil and wrap it in aluminum foil.

        - Place the wrapped garlic in the oven and roast for 30-35 minutes, until the cloves are soft and caramelized.

          Prepare the White Bean Mixture:

            - In a mixing bowl, combine the drained white beans, olive oil, lemon juice, salt, black pepper, red pepper flakes (if using), and the fresh herbs.

              - Squeeze the roasted garlic cloves out of their skins and add them to the bean mixture. Mash everything together with a fork or potato masher until creamy but still slightly chunky.

                Toast the Bread:

                  - While the garlic and beans cool, toast your slices of sourdough in a toaster or on a grill until they are golden and crispy.

                    Assemble the Toasts:

                      - Spread a generous amount of the roasted garlic white bean mixture on each slice of toast.
