Roasted Garlic & Spinach Ricotta Lasagna Rolls

9-12 lasagna noodles

1 bulb of garlic

2 tablespoons olive oil

2 cups fresh spinach

1 cup ricotta cheese

1 cup mozzarella cheese, shredded (plus extra for topping)

½ cup Parmesan cheese, grated

1 large egg

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

2 cups marinara sauce (store-bought or homemade)

Fresh basil leaves (for garnish)

Instructions
 

Preheat the oven to 400°F (200°C). Prepare a baking dish by spreading 1 cup of marinara sauce evenly across the bottom.

    Roast the garlic: Slice the top off the bulb of garlic to expose the cloves. Drizzle with 1 tablespoon of olive oil and wrap it in aluminum foil. Place it in the oven for 30-35 minutes, until soft and fragrant. Let it cool slightly, then squeeze the cloves out of their skins into a bowl and mash into a paste.

      Cook the noodles: Bring a large pot of salted water to a boil. Cook the lasagna noodles according to package instructions until al dente. Drain and lay them flat on a clean kitchen towel to cool.

        Sauté the spinach: In a skillet, heat the remaining tablespoon of olive oil over medium heat. Add the fresh spinach and sauté until wilted, about 2-3 minutes. Remove from heat and set aside to cool.

          Prepare the filling: In a mixing bowl, combine the ricotta cheese, roasted garlic paste, sautéed spinach, mozzarella cheese, Parmesan cheese, egg, dried oregano, salt, and black pepper. Mix until well incorporated.

            Assemble the lasagna rolls: Take one lasagna noodle and spread a generous amount of the ricotta-spinach mixture along the length of it. Roll the noodle up tightly, starting from one end. Place the rolled noodle seam-side down in the baking dish. Repeat with the remaining noodles and filling.

              Top the rolls: Once all the rolls are arranged in the dish, pour the remaining marinara sauce evenly over the top. Sprinkle additional mozzarella cheese on top.

                Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for another 10-15 minutes, or until the cheese is bubbly and golden brown.

                  Garnish and serve: Remove from the oven and let cool for a few minutes. Garnish with fresh basil leaves before serving.
