Roasted Garlic & Mushroom Flatbread

Ingredients
  

1 large pizza dough (store-bought or homemade)

1 cup button mushrooms, sliced

1 cup cremini mushrooms, sliced

1 head of garlic

3 tablespoons olive oil, divided

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

½ teaspoon red pepper flakes (optional)

⅓ cup ricotta cheese

1 cup shredded mozzarella cheese

¼ cup grated Parmesan cheese

Salt and pepper to taste

Fresh arugula, for garnish (optional)

Balsamic glaze, for drizzling (optional)

Instructions
 

Roast the Garlic: Preheat your oven to 400°F (200°C). Slice the top off the bulb of garlic to expose the cloves, drizzle with 1 tablespoon of olive oil, and wrap it in aluminum foil. Roast in the oven for about 30-35 minutes until the cloves are soft and caramelized. Once done, let it cool slightly before squeezing the garlic cloves out of their skins into a small bowl. Mash and set aside.

    Prepare Mushrooms: In a skillet over medium heat, warm 2 tablespoons of olive oil. Add the sliced button and cremini mushrooms, and season with salt, pepper, thyme, and red pepper flakes. Sauté until the mushrooms are browned and any moisture has evaporated, about 5-7 minutes. Remove from heat and let cool.

      Preheat the Oven for Flatbread: Increase the oven temperature to 475°F (245°C). If using a pizza stone, place it in the oven to preheat as well.

        Assemble the Flatbread: On a lightly floured surface, roll out the pizza dough into a rectangle or circle (about ¼ inch thick). Transfer it to a parchment-lined baking sheet or a pizza peel if using a stone. Spread the roasted garlic evenly over the dough, leaving a small border around the edges.

          Add Cheese & Mushrooms: Dollop the ricotta cheese evenly across the flatbread, followed by the sautéed mushrooms. Sprinkle the mozzarella and Parmesan cheeses evenly over the top.

            Bake: Carefully transfer the flatbread to the preheated oven (or pizza stone) and bake for 12-15 minutes, or until the crust is golden and the cheese is bubbly.

              Finish & Serve: Remove the flatbread from the oven and let it cool for a minute. Top with fresh arugula and drizzle with balsamic glaze if desired. Slice and serve warm!
