Roasted Garlic Corn Dip

Ingredients
  

4 ears of fresh corn, husked and kernels removed (or 2 cups frozen corn)

8 cloves of garlic, unpeeled

1 cup cream cheese, softened

1 cup sour cream

1 cup shredded sharp cheddar cheese

1/2 cup mayonnaise

1 teaspoon smoked paprika

1 teaspoon chili powder

1 teaspoon onion powder

1/2 teaspoon salt (to taste)

1/4 teaspoon black pepper

1/4 cup fresh cilantro, chopped (or scallions for garnish)

Tortilla chips (for serving)

Instructions
 

Roast the Garlic: Preheat your oven to 400°F (200°C). Place the unpeeled garlic cloves on a baking sheet and drizzle with a little olive oil. Wrap them in aluminum foil and roast for about 30 minutes, or until they are soft and golden brown. Allow to cool slightly, then squeeze the garlic cloves from their skins into a bowl.

    Prepare the Corn: If using fresh corn, bring a pot of water to a boil. Add the corn and cook for about 3-4 minutes until bright and tender. Drain and set aside to cool. If using frozen corn, simply thaw it and pat dry.

      Mix the Base: In a large mixing bowl, combine the roasted garlic, softened cream cheese, sour cream, shredded cheddar cheese, and mayonnaise. Mix well until smooth and creamy.

        Add Seasonings: Stir in the smoked paprika, chili powder, onion powder, salt, and black pepper. Mix until all ingredients are well combined.

          Incorporate the Corn: Gently fold in the roasted corn kernels, ensuring they are evenly distributed throughout the dip.

            Bake (Optional): Preheat your oven to 375°F (190°C). Transfer the dip mixture into a baking dish and smooth out the top. Bake for 20-25 minutes, until hot and bubbling, or you can serve it chilled or at room temperature.
