1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1 ripe avocado, diced

1 cup cherry tomatoes, halved

1/2 cucumber, diced

1/4 red onion, thinly sliced

2 cups fresh spinach or mixed greens

2 tablespoons tahini

Juice of 1 lemon

Fresh cilantro or parsley, for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Chickpeas: Spread the drained and rinsed chickpeas on a clean kitchen towel and gently pat them dry. This helps achieve crispiness.
