1 lb Brussels sprouts, trimmed and halved

3 tablespoons olive oil

2 tablespoons balsamic vinegar

1 tablespoon honey or maple syrup

2 cloves garlic, minced

½ teaspoon salt

¼ teaspoon black pepper

¼ teaspoon red pepper flakes (optional)

2 tablespoons grated Parmesan cheese (optional)

Fresh parsley, chopped for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Brussels Sprouts: In a large mixing bowl, toss the halved Brussels sprouts with olive oil, balsamic vinegar, honey (or maple syrup), minced garlic, salt, black pepper, and red pepper flakes if using. Ensure all the sprouts are evenly coated.

      Roast: Spread the Brussels sprouts in a single layer on a baking sheet, cut side down for optimal caramelization. Place them in the preheated oven and roast for about 20-25 minutes, or until they are golden brown and tender. Stir halfway through for even cooking.

        Glaze and Serve: Remove the sprouts from the oven, and drizzle an additional tablespoon of balsamic vinegar over them while they are still hot. At this point, if desired, sprinkle grated Parmesan cheese over the top and return to the oven for an additional 2-3 minutes, until the cheese is melted.

          Garnish: Transfer the roasted Brussels sprouts to a serving dish, garnish with freshly chopped parsley, and enjoy while hot!
