12 jumbo pasta shells

1 lb ground beef

1 medium onion, chopped

2 cloves garlic, minced

1 cup mushrooms, sliced (optional)

2 cups spinach, fresh or frozen

1 can (15 oz) tomato sauce

1 cup cottage cheese

1 cup shredded mozzarella cheese, divided

½ cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

½ teaspoon red pepper flakes (optional)

1 tablespoon olive oil

Fresh basil for garnish (optional)

Instructions
 

Prep the pasta: Cook the jumbo shells in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside to cool slightly.

    Cook the beef: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent, about 3-4 minutes. Add the ground beef, breaking it apart with a wooden spoon. Cook until browned and no longer pink, about 6-8 minutes. If using, add sliced mushrooms and cook for an additional 3-4 minutes.

      Season the mixture: Stir in the spinach, tomato sauce, Italian seasoning, salt, pepper, and red pepper flakes (if using). Cook for about 5-7 minutes until the spinach is wilted and the mixture is heated through. Remove from heat.

        Prepare the filling: In a mixing bowl, combine cottage cheese, half of the mozzarella cheese, and half of the Parmesan cheese. Stir until well mixed.

          Assemble the casserole: Preheat your oven to 350°F (175°C). In a greased casserole dish, spread a thin layer of the beef mixture at the bottom. Stuff each cooked jumbo shell with the cheese mixture, then place them seam-side up in the casserole dish. Once all shells are stuffed, pour the remaining beef mixture over the top.

            Top it off: Sprinkle the remaining mozzarella and Parmesan cheeses on top of the casserole.

              Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until bubbly and golden on top.

                Serve & garnish: Remove from the oven and let it cool slightly before serving. Garnish with fresh basil if desired.
