Ingredients
  

4 cups seedless watermelon, cubed

1 cup cucumber, diced

1 cup cherry tomatoes, halved

1/2 cup red onion, finely chopped

1/2 cup crumbled feta cheese

1/4 cup fresh cilantro, chopped

1 jalapeño, finely diced (seeds removed for less heat)

Juice of 2 limes

2 tablespoons olive oil

Salt and pepper to taste

Optional: 1/4 teaspoon chili powder or Tajín seasoning for extra kick

Instructions
 

In a large mixing bowl, combine the cubed watermelon, diced cucumber, halved cherry tomatoes, and finely chopped red onion.

    Add the crumbled feta cheese and fresh cilantro to the bowl, gently tossing the ingredients together to avoid breaking the feta.

      In a small bowl, whisk together the lime juice, olive oil, salt, pepper, and chili powder (if using) until well combined. This will be your dressing.

        Pour the dressing over the salad mixture and toss lightly until everything is evenly coated.

          For an added crunch, sprinkle the finely diced jalapeño on top, mixing it in carefully.

            Let the salad chill in the refrigerator for at least 20 minutes before serving. This allows the flavors to meld beautifully.

              Serve chilled with an additional sprinkle of feta and cilantro for garnish.
