2 cups fresh or frozen raspberries

1/4 cup granulated sugar

1 tablespoon cornstarch

1 tablespoon lemon juice

1/2 teaspoon vanilla extract

For the Almond Crumble Base and Topping:

1 1/2 cups all-purpose flour

1 cup rolled oats

1/2 cup brown sugar, packed

1/2 cup granulated sugar

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup cold unsalted butter, cubed

1/2 teaspoon almond extract

1/2 cup sliced almonds (optional)

Powdered sugar for dusting

Prepare the Raspberry Filling:

    - In a medium saucepan over medium heat, combine the raspberries, granulated sugar, cornstarch, lemon juice, and vanilla extract.

      - Stir gently until the mixture starts to simmer and thicken, about 5-7 minutes. Once thickened, remove from heat and let it cool.

        Make the Crumble Base and Topping:

          - Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking pan or line it with parchment paper, allowing the paper to hang over the sides for easy removal.

            - In a large mixing bowl, combine flour, rolled oats, brown sugar, granulated sugar, baking soda, and salt.

              - Add the cubed cold butter and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs. Don’t overmix; it should still be a bit crumbly.

                - Stir in the almond extract and sliced almonds (if using) until evenly incorporated.

                  Assemble the Bars:

                    - Press half of the crumble mixture into the bottom of the prepared baking pan to form the base. Spread the cooled raspberry filling evenly over the base.

                      - Sprinkle the remaining crumble mixture over the raspberry filling, ensuring it’s evenly distributed.

                        Bake:

                          - Bake the bars in the preheated oven for 30-35 minutes, or until the topping is golden brown and the raspberry filling is bubbly.
