8 large romaine or butter lettuce leaves

1 cup sushi rice

1 ¼ cups water

2 tablespoons rice vinegar

1 tablespoon sugar

1 teaspoon salt

1 small cucumber, julienned

1 small carrot, julienned

1 ripe avocado, sliced

1 bell pepper (red or yellow), julienned

½ cup purple cabbage, shredded

¼ cup scallions, finely chopped

1 sheet nori, cut into thin strips (for garnish)

Soy sauce or tamari (for dipping)

Sesame seeds (for garnish)

Sriracha or wasabi (optional for an extra kick)

Instructions
 

Prepare the sushi rice: Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for about 18 minutes, or until all water is absorbed. Remove from heat and let it sit, covered, for an additional 10 minutes.

    Season the rice: In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice using a wooden spoon. Allow the rice to cool to room temperature.

      Prepare the filling: While the rice is cooling, prepare your vegetables by julienning the cucumber, carrot, and bell pepper. Slice the avocado and shred the purple cabbage.

        Assemble the wraps: Take a lettuce leaf and spoon about 2-3 tablespoons of sushi rice into the center. Add a mix of the julienned vegetables (cucumber, carrot, bell pepper), avocado slices, and red cabbage on top of the rice. Sprinkle some chopped scallions for flavor.

          Wrap it up: Carefully fold the sides of the lettuce leaf over the filling, then roll it up from the bottom to create a little wrap.

            Garnish and serve: Arrange the wraps on a serving platter. Garnish with thin strips of nori on top and sprinkle with sesame seeds. Serve with soy sauce or tamari on the side for dipping. Add a dash of Sriracha or wasabi if you like a bit of heat!
