1 lb (450g) boneless chicken thighs, thinly sliced

2 tablespoons vegetable oil

4 cloves garlic, minced

2-3 red bird’s eye chilies, finely chopped (adjust for spice level)

1 bell pepper (red or green), sliced

1 cup fresh Thai basil leaves

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon fish sauce

1 teaspoon sugar

Cooked jasmine rice, for serving

Lime wedges, for garnish

Instructions
 

Prep the Chicken: Start by slicing the chicken thighs into thin strips. This will help them cook quickly and evenly.

    Make the Sauce: In a small bowl, mix together the soy sauce, oyster sauce, fish sauce, and sugar until the sugar dissolves. Set aside.

      Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

        Sauté Aromatics: Add the minced garlic and bird’s eye chilies to the pan. Stir-fry for about 30 seconds until fragrant, being careful not to burn the garlic.

          Cook the Chicken: Increase the heat to high and add the sliced chicken to the pan. Stir-fry for 4-5 minutes until the chicken is cooked through and starting to brown.

            Add Vegetables: Toss in the sliced bell pepper and continue to stir-fry for another 2 minutes until the peppers are tender yet still crisp.

              Combine with Sauce: Pour the prepared sauce over the chicken and vegetables. Stir well to coat everything evenly. Allow it to simmer for about 1 minute for all the flavors to meld.

                Stir in Basil: Remove the pan from heat and add the fresh Thai basil leaves. Stir gently until the basil wilts, which should only take about 30 seconds.

                  Serve: Plate the spicy Thai basil chicken over a bowl of fluffy jasmine rice. Garnish with lime wedges on the side for a zesty finish.
