8 oz (about 2 cups) elbow macaroni or any pasta shape of choice

1 lb ground turkey

1 tablespoon olive oil

1 small onion, finely diced

2 cloves garlic, minced

1 bell pepper (red or green), diced

1 packet (1 oz) taco seasoning mix

1 can (15 oz) diced tomatoes, undrained

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 cup chicken or vegetable broth

1 cup shredded cheddar cheese

Salt and pepper, to taste

Fresh cilantro or parsley, for garnish

Sliced jalapeños (optional), for garnish

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Aromatics: While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the diced onion and bell pepper, and sauté for about 5 minutes, until softened. Stir in the minced garlic and cook for another minute until fragrant.

      Brown the Turkey: Add the ground turkey to the skillet. Cook, breaking it apart with a spatula, for about 5-7 minutes until it's browned and cooked through. Drain excess fat if necessary.

        Season it Up: Sprinkle the taco seasoning over the turkey and vegetables. Stir to combine thoroughly.

          Combine Ingredients: Add the undrained diced tomatoes, black beans, corn, and chicken or vegetable broth to the skillet. Stir everything together and let it simmer for about 5 minutes, allowing the flavors to meld.

            Mix in the Pasta: Add the cooked pasta to the skillet, stirring until everything is well combined. If the mixture seems too thick, add a little more broth to reach your desired consistency.
