1 cup all-purpose flour

1 cup whole wheat flour

1 teaspoon salt

1 tablespoon olive oil

3/4 cup warm water (about 100°F)

1 teaspoon sugar or honey (optional, for a touch of sweetness)

Cornmeal (for dusting)

Mix the Dough: In a large mixing bowl, combine the active sourdough starter, warm water, and sugar/honey (if using). Stir until well mixed.

    Combine Dry Ingredients: In another bowl, whisk together the all-purpose flour, whole wheat flour, and salt.

      Form the Dough: Gradually add the dry mixture into the wet ingredients, stirring until a shaggy dough forms. Add olive oil and mix until incorporated.

        Knead: Transfer the dough onto a floured surface and knead for about 5-10 minutes until the dough is smooth and elastic. If the dough is sticky, sprinkle a bit more flour as needed.

          First Rise: Place the dough in a lightly oiled bowl, cover with a damp cloth or plastic wrap, and let it rise at room temperature for about 30 minutes. The dough should puff up slightly.
