Ingredients

4 salmon fillets (about 6 oz each)

1 lb asparagus, trimmed

3 tablespoons olive oil

2 tablespoons fresh lemon juice

1 teaspoon lemon zest

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

Lemon slices for garnish

Fresh parsley, chopped for garnish

Instructions

Preheat the oven: Preheat your oven to 400°F (200°C) and line a sheet pan with parchment paper for easy clean-up.

Prepare the asparagus: In a mixing bowl, toss the trimmed asparagus with 1 tablespoon of olive oil, salt, and pepper. Spread them evenly on one side of the prepared sheet pan.

Make the marinade: In a separate bowl, whisk together the remaining 2 tablespoons of olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, and a pinch of salt and pepper.

Coat the salmon: Place the salmon fillets on the empty side of the sheet pan. Brush each fillet generously with the lemon herb marinade.

Arrange on the pan: Place lemon slices on top of each salmon fillet, if desired, for added flavor and garnish.

Bake: Place the sheet pan in the preheated oven and bake for about 12-15 minutes, or until the salmon flakes easily with a fork and the asparagus is tender-crisp.

Garnish and serve: Remove the pan from the oven, sprinkle the dish with fresh chopped parsley, and serve hot. Enjoy your quick and healthy meal!
