2 cups grilled chicken, shredded

1 cup corn kernels (fresh, frozen, or canned)

1/2 cup mayonnaise

1/2 cup sour cream

1/2 cup crumbled cotija cheese (or feta cheese)

1 lime, juiced and zested

1 tsp chili powder

1/2 tsp smoked paprika

1/4 tsp garlic powder

1/4 cup fresh cilantro, chopped

Salt and pepper, to taste

4 large flour tortillas or wraps

Optional toppings: diced avocado, extra cilantro, hot sauce, sliced jalapeƱos

Instructions
 

Prepare the Corn Mixture: In a large mixing bowl, combine the corn kernels with mayonnaise, sour cream, cotija cheese, lime juice, lime zest, chili powder, smoked paprika, garlic powder, and chopped cilantro. Season with salt and pepper to taste. Mix well until all ingredients are thoroughly combined.

    Add the Chicken: Fold the shredded grilled chicken into the corn mixture gently until the chicken is evenly coated with the creamy corn mixture. Taste and adjust seasoning if needed.
