Ingredients

4 (6 oz) salmon fillets

1 bunch asparagus, trimmed

2 tablespoons olive oil

2 tablespoons fresh lemon juice (about 1 lemon)

2 teaspoons lemon zest (from the lemon used above)

3 garlic cloves, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper, to taste

Lemon slices, for garnish

Fresh parsley, chopped (optional, for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Marinade: In a small bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and pepper until well combined.

Marinate the Salmon: Place the salmon fillets in a shallow dish. Pour half of the marinade over the salmon, ensuring each piece is well coated. Let it marinate for about 10-15 minutes.

Prepare the Asparagus: On a large baking sheet, arrange the trimmed asparagus in a single layer. Drizzle with olive oil and season with salt and pepper. Toss to coat evenly.

Bake Salmon and Asparagus: After marinating the salmon, place the fillets on the same baking sheet as the asparagus, skin-side down. Pour the remaining marinade over the salmon.

Roast: Bake in the preheated oven for 15-18 minutes, or until the salmon is cooked through and flakes easily with a fork, and the asparagus is tender yet crisp.

Serve: Remove from the oven and garnish with extra lemon slices and parsley, if desired. Enjoy your delicious lemon herb salmon and asparagus!
