1 pound large shrimp, peeled and deveined

4 cups fresh spinach, washed and drained

4 cloves garlic, minced

3 tablespoons olive oil

Zest and juice of 1 large lemon

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

Fresh parsley, chopped for garnish

Lemon wedges for serving

Prepare the Shrimp: In a bowl, toss the shrimp with salt, pepper, and half of the lemon juice and zest. Let it marinate for about 10 minutes while you prepare the other ingredients.

    Heat the Pan: In a large skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and red pepper flakes. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.

      Cook the Shrimp: Add the shrimp to the skillet in a single layer. Cook for about 2-3 minutes on one side until they turn pink and opaque. Flip them over and cook for an additional 1-2 minutes on the other side.

        Add Spinach: Once the shrimp are cooked, stir in the spinach, remaining lemon juice, and zest. Cook for another 2-3 minutes until the spinach is wilted and tender.
