Quick Lemon Garlic Shrimp and Zucchini Noodles

1 lb large shrimp, deveined and peeled

2 medium zucchinis, spiralized into noodles

4 cloves garlic, minced

1 lemon (zest and juice)

3 tablespoons olive oil

1/2 teaspoon red pepper flakes (adjust to taste)

Salt and black pepper, to taste

1/4 cup fresh parsley, chopped (for garnish)

Grated Parmesan cheese (optional, for serving)

Instructions
 

Prepare the Zucchini Noodles: Using a spiralizer, create zucchini noodles from the two zucchinis. Set aside. If you don't have a spiralizer, you can use a vegetable peeler to make thin ribbons or julienne strips.

    Season the Shrimp: In a medium bowl, toss the shrimp with salt, black pepper, and half of the lemon zest. Set aside for a few minutes to marinate.

      Sauté the Garlic: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing until fragrant (about 30 seconds to 1 minute). Be careful not to burn the garlic.

        Cook the Shrimp: Add the marinated shrimp to the skillet. Cook for about 2-3 minutes on one side until they begin to turn pink. Flip the shrimp and squeeze in the juice of half the lemon. Cook for an additional 2-3 minutes until they are completely cooked through and opaque.

          Add Zucchini Noodles: Push the shrimp to one side of the skillet and add the spiralized zucchini noodles to the other side. Drizzle the remaining olive oil and the rest of the lemon zest over the zucchini noodles. Toss everything together and cook for about 1-2 minutes, just until the zucchini is slightly tender but still crisp.

            Finish and Serve: Remove from heat and taste for seasoning, adjusting salt, pepper, or lemon juice as needed. Plate the zucchini noodles topped with shrimp, and sprinkle with chopped parsley. If desired, add grated Parmesan cheese for an extra layer of flavor.
