2 pounds baby potatoes, halved

3 tablespoons olive oil

1 packet (1 oz) ranch seasoning mix

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and black pepper, to taste

1 cup shredded cheddar cheese

1/2 cup sour cream

Fresh parsley or chives, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Potatoes: In a large mixing bowl, combine the halved baby potatoes with olive oil, ranch seasoning, garlic powder, onion powder, salt, and black pepper. Toss until all potatoes are well-coated.

      Bake the Potatoes: Spread the seasoned potatoes in a single layer on a large baking sheet lined with parchment paper. Bake in the preheated oven for about 20-25 minutes, or until they are golden brown and fork-tender.

        Add Cheese: Remove the baking sheet from the oven. Sprinkle the shredded cheddar cheese evenly over the potatoes. Return to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.

          Prepare Ranch Drizzle: While the potatoes are baking, mix sour cream with a dash of ranch seasoning for an extra flavor boost.
