Ingredients

1 pound (450g) beef sirloin, thinly sliced against the grain

2 tablespoons vegetable oil

1 medium onion, sliced

1 red bell pepper, sliced

1 cup snap peas, trimmed

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

3 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon hoisin sauce

1 teaspoon sesame oil

1 teaspoon cornstarch mixed with 2 tablespoons water

Salt and pepper to taste

Cooked jasmine rice or noodles for serving

Optional: sesame seeds and chopped green onions for garnish

Instructions

Marinate the Beef: In a bowl, combine the beef slices with 1 tablespoon of soy sauce and a sprinkle of black pepper. Let it marinate for about 10 minutes.

Prepare the Sauce: In a small bowl, mix together the remaining soy sauce, oyster sauce, hoisin sauce, sesame oil, and the cornstarch mixture. Set aside.

Heat the Pan: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Once hot, add the marinated beef in a single layer. Stir-fry for about 2-3 minutes until browned and just cooked through. Remove the beef from the pan and set aside.

Cook the Veggies: In the same pan, add the remaining tablespoon of vegetable oil. Add the sliced onion, red bell pepper, and snap peas. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.

Add Aromatics: Add the minced garlic and ginger to the pan, and stir-fry for another 30 seconds until fragrant.

Combine & Finish: Return the beef to the pan, then pour the prepared sauce over the mixture. Stir-fry for another 1-2 minutes until everything is well-coated and the sauce thickens. Adjust seasoning with salt and pepper if necessary.

Serve: Remove from heat and serve hot over jasmine rice or noodles. Garnish with sesame seeds and chopped green onions if desired.
