4 large bell peppers (any color)

1 lb ground beef or turkey

1 cup cooked rice (white or brown)

1 can (15 oz) black beans, drained and rinsed

1 cup corn (canned or frozen)

1 packet taco seasoning

1 cup salsa (your choice of mild, medium, or hot)

1 cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro, chopped (for garnish)

Sour cream (optional, for serving)

Lime wedges (optional, for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. If needed, trim the bottom slightly so they stand upright.

      Cook the Meat: In a large skillet over medium heat, add the ground beef or turkey. Cook until browned, breaking it apart with a spatula as it cooks (about 5-7 minutes). Drain excess fat if necessary.

        Mix the Filling: Add the cooked rice, black beans, corn, taco seasoning, and salsa to the skillet. Stir everything together until well combined and heated through (about 3-5 minutes).

          Stuff the Peppers: Using a spoon, fill each bell pepper with the taco mixture until full. Place them upright in a baking dish.

            Top with Cheese: Sprinkle the shredded cheese over the top of each stuffed pepper.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

                Garnish and Serve: Once baked, remove the peppers from the oven. Sprinkle with chopped cilantro and serve with lime wedges and a dollop of sour cream if desired.
