Quick and Easy Beef Stroganoff over Noodles

1 lb (450g) beef sirloin, thinly sliced

2 tablespoons olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

8 oz (225g) mushrooms, sliced

1 cup beef broth

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

1 cup sour cream

Salt and pepper to taste

8 oz (225g) egg noodles

Fresh parsley for garnish (optional)

Instructions
 

Cook the Noodles: Bring a large pot of salted water to a boil. Add the egg noodles and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Beef: In a large skillet, heat the olive oil over medium-high heat. Add the sliced beef sirloin in batches, cooking for 2-3 minutes until browned. Remove the beef from the skillet and set aside.

      Cook the Vegetables: In the same skillet, add the chopped onion and garlic, sautéing for about 2 minutes until translucent. Add the sliced mushrooms and cook for an additional 4-5 minutes until they are browned and tender.

        Create the Sauce: Pour in the beef broth, Worcestershire sauce, and Dijon mustard. Stir well, scraping up any brown bits from the bottom of the skillet. Simmer for about 5 minutes until the sauce slightly thickens.

          Combine and Finish: Lower the heat to medium-low and return the cooked beef to the skillet. Stir in the sour cream until well-combined. Cook for another minute or two until heated through. Season with salt and pepper to taste.

            Serve the Dish: Serve the beef stroganoff over the cooked egg noodles, garnishing with fresh parsley, if desired.
