Ingredients

1 medium head of green cabbage, thinly sliced

2 large onions, halved and thinly sliced

3 tablespoons olive oil

2 tablespoons unsalted butter

2 tablespoons brown sugar

1 tablespoon balsamic vinegar

Salt and pepper to taste

Fresh thyme or parsley for garnish (optional)

Instructions

Prep the Vegetables: Begin by slicing the cabbage into thin strips and halving the onions, then slice them into thin half-rings. This will help them caramelize evenly.

Heat the Fat: In a large skillet, heat the olive oil and butter over medium heat until the butter is melted and bubbling.

Add Onions: Add the sliced onions to the skillet. Sauté for about 5 minutes, stirring occasionally until they start to soften and turn golden.

Incorporate Cabbage: Add the sliced cabbage to the skillet. Stir well to combine with the onions. Cook for another 5 minutes, allowing any moisture from the cabbage to evaporate.

Sweeten the Mix: Sprinkle brown sugar over the cabbage and onions, stirring to coat evenly. This will help in the caramelization process.

Season & Add Flavor: Pour in the balsamic vinegar. Season with salt and pepper to taste. Continue cooking, stirring occasionally, for an additional 15-20 minutes. The mixture should become soft, caramelized, and richly fragrant.

Serve: Once caramelized to your liking, remove from heat. Garnish with fresh thyme or parsley, if desired. Serve warm as a side dish or atop grains for a delightful vegetarian meal.
