Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1 teaspoon ground ginger

1/2 teaspoon ground nutmeg

1/4 teaspoon ground cloves

1/2 teaspoon salt

1/3 cup granulated sugar

1/2 cup unsalted butter, chilled and cubed

3/4 cup pumpkin puree

1/2 cup buttermilk

1 teaspoon vanilla extract

1/2 cup chopped walnuts or pecans (optional)

1 egg, for egg wash (optional)

Cinnamon sugar for sprinkling

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients: In a large mixing bowl, combine the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, cloves, salt, and sugar. Whisk them together until evenly combined.

Incorporate Butter: Add the chilled, cubed butter to the flour mixture. Using a pastry cutter or your fingertips, work the butter into the flour until the mixture resembles coarse crumbs.

Combine Wet Ingredients: In a separate bowl, whisk together the pumpkin puree, buttermilk, and vanilla extract until smooth.

Mix Wet and Dry: Pour the wet mixture into the dry ingredients and gently mix until just combined. If you’re adding nuts, fold them into the dough. Be careful not to over-mix; a few lumps are okay.

Shape the Biscuits: Turn the dough out onto a floured surface and pat it into a rectangle about 1 inch thick. Using a sharp knife or a biscuit cutter, cut out bite-sized pieces.

Prepare for Baking: Place the biscuit bites on the prepared baking sheet, leaving space between each one. If desired, brush the tops with a beaten egg for a golden finish, then sprinkle lightly with cinnamon sugar.

Bake: Bake in the preheated oven for about 15-20 minutes or until the biscuit bites are puffed and golden brown.

Cool and Serve: Remove from the oven and let cool for a few minutes before serving. Enjoy warm or at room temperature!
