Ingredients

1 medium onion, diced

3 cloves garlic, minced

2 tbsp olive oil

1 tbsp unsalted butter

2 cups pumpkin puree (fresh or canned)

4 cups vegetable broth

1 cup heavy cream

1/2 cup coconut milk (for creaminess and flavor)

1 tbsp fresh sage, finely chopped (plus extra for garnish)

1 tsp ground nutmeg

1 tsp salt (adjust to taste)

1/2 tsp black pepper

1/4 tsp cayenne pepper (optional, for a kick)

Toasted pumpkin seeds (for garnish)

Instructions

Sauté Aromatics: In a large pot, heat the olive oil and butter over medium heat. Add the diced onion and sauté until soft and translucent, about 5-7 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

Add Pumpkin: Stir in the pumpkin puree, mixing well with the onion and garlic. Cook for 3-4 minutes to combine the flavors.

Incorporate Broth: Pour in the vegetable broth, stirring to combine. Bring the mixture to a gentle simmer and let cook for about 15 minutes, allowing the flavors to meld.

Blend Soup: Remove the pot from heat. Using an immersion blender, puree the soup until smooth. If you do not have an immersion blender, transfer the soup in batches to a countertop blender, being cautious of the hot liquid.

Creamy Addition: Return the pot to low heat. Stir in the heavy cream, coconut milk, chopped sage, nutmeg, salt, black pepper, and cayenne pepper, if using. Cook for an additional 5 minutes until warmed through, stirring occasionally. Adjust seasoning to taste.

Serve: Ladle the bisque into bowls and garnish with extra sage and toasted pumpkin seeds for added crunch and flavor. Enjoy your warm, comforting soup!
