Ingredients

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup brown sugar, packed

1 teaspoon ground cinnamon

½ teaspoon salt

2 cups pumpkin puree (canned or fresh)

1 cup sweetened condensed milk

3 large eggs

1 teaspoon vanilla extract

1 teaspoon ground ginger

½ teaspoon ground nutmeg

Whipped cream for topping (optional)

Chopped pecans or walnuts for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with cooking spray or line it with parchment paper for easy removal later.

Prepare the Crust: In a medium bowl, combine the graham cracker crumbs, melted butter, brown sugar, cinnamon, and salt. Mix until crumbly. Press the mixture firmly into the bottom of the prepared baking dish to form an even layer. Bake the crust in the preheated oven for about 10 minutes. Remove and let cool slightly.

Make the Pumpkin Filling: In a large bowl, whisk together the pumpkin puree, sweetened condensed milk, eggs, vanilla extract, ginger, and nutmeg until well combined and smooth.

Assemble Bars: Pour the pumpkin filling over the pre-baked graham cracker crust, spreading it out evenly with a spatula.

Bake: Bake in the preheated oven for 25-30 minutes, or until the filling is set and a toothpick inserted into the center comes out clean. Keep an eye on it to avoid overcooking.

Cool and Serve: Once baked, remove from the oven and let it cool completely at room temperature. For easier slicing, refrigerate for at least 2 hours before cutting into bars.

Garnish and Enjoy: Serve chilled or at room temperature, optionally topped with a dollop of whipped cream and a sprinkle of chopped nuts for added crunch.
