1 ½ cups old-fashioned rolled oats

1 cup canned pumpkin puree

2 ripe bananas

½ cup almond milk (or any milk of choice)

1/3 cup maple syrup (or honey)

1 tsp vanilla extract

1 tsp baking powder

½ tsp baking soda

½ tsp ground cinnamon

¼ tsp ground nutmeg

¼ tsp salt

½ cup walnuts or pecans, chopped (optional)

½ cup dark chocolate chips (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with silicone or paper liners.

    Blend the Ingredients: In a blender, combine the rolled oats, pumpkin puree, bananas, almond milk, maple syrup, and vanilla extract. Blend until you achieve a smooth batter.

      Add Dry Ingredients: Add baking powder, baking soda, cinnamon, nutmeg, and salt to the blender. Pulse a few times until just combined—be careful not to overmix.

        Incorporate Nuts and Chocolate (if desired): If you’re using walnuts or chocolate chips, add them to the blender and stir gently by hand until evenly distributed.

          Fill Muffin Tins: Pour the batter into the prepared muffin tin, filling each cup about ¾ full.

            Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

              Cool: Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
